The better parameters are as follow s: KOH dosage is . 50 g, sapon ifica- tion reaction tmi e is 2 h, and ultrason ic pow er is 250 W. The refining of lycopene oleoresin by u ltrasound-assisted saponification can sign ificantly mi prove the purity, color value and scavenging activity to DPPH# free radical of lyco- pene oleoresin.
