TheESR adductsignalswereanalyzedtostudytheeffectofdoublebondsandthechainlengthoftheFAsofTAG onoxidation. OxidationwasconductedbyapplyingUVirradiationtoTAGbydissolvingitinN-tert-buthyl-c-【phenylnitrone(PBN),whichtrapped theradicalsinducedintheTAGasanESRadductsigna1.ThedetectionwasclearlysuccessfuI.Therewerenodifferencesinthespectra oftristearin(18:01andtripalmitin(16:0):thus,itcanbeconcludedthatthelengthofthecarbonchainoftheFAsofTAGdoesnotaffect theoxidationreactions.However,theESRspectraoftristearin(18:0)triolein(18:1)andtrilinolein(18:3)wereclearlydifferentdueto theDresence/absenceofanewpeakcorrespondingtonewinducedradicals.1eadingtotheconclusionthatdoublebondsplayamajor roleintheoxjdationreactionsoffatsandoils.
