Abstract With the economic and technological development, the world seems increasingly smaller and smaller, globalization is an irresistible trend of development. The gaps between different countries become smaller and smaller, the intercommunion is increasing. Therefore the clash of culture is enhancing. Behavior of different individuals and rituals reflect the ideological values of different cultures. Through the appearance such as the acting of rituals to see deeper culture connotation it is very helpful for us to have a better understanding and communicating of cross-culture. This dissertation is to analyzes the table manners in eastern and western and compare the two cultures, from these aspects to see the differences of core values. The paper uses the literature-analysis method, reading books and analyzing the information. From different aspects, we can see that the culture of the East is mainly reflected the core of collectivism, while the core of Western culture is individualism. Through the comparison of the two cultures we have a profound understanding of values of our culture. The result demonstrates that there is no good or bad of cultures itself, and we should adopt an objective and respectful attitude towards different cultures, so that it can make us understand and accept the foreign cultures in cultural exchange, at the same time, we can insist on and promote our own culture. Key words: Chinese and Western table manners; comparison; collectivism; individualism 中文摘要 随着经济和科技的发展，世界变得越来越小，全球化是不可阻挡的发展趋势。国与国之间的距离越来越小，人与人的交流越来越多，从而产生出的文化碰撞也越来越多。不同个体的行为和礼仪都反映了不同文化的思想价值观。从行为礼仪等表象看更深层的文化内涵，对于了解不同文化和跨文化交流有很大帮助。 本文对中西方在用餐礼仪方面进行分析以及对比研究，并希望从这些方面分析中西文化的核心价值的差异。研究采用了文献分析的方法，阅读不同的书籍并对资料进行整理分析。从不同的研究来看，东方的主要体现的文化核心是集体主义，而西方的文化核心则是个人主义。 研究结果对我们的启示是：通过文化的对比，使我们对自己的文化和其他文化有了更深的认识，各种文化并无优劣之分，我们应该以客观和尊重的态度去对待不同的文化，这样才有利于我们在文化交流中做到既可以了解和接受外国文化，又可以坚持和发扬自身的文化。 关键词：中西餐桌礼仪；比较；集体主义；个人主义 1.
