In this ever-increasing and fast developing food processing industry, ingredients and flavors have
been acknowledged as the most important factor long time back. Point to be noted here is that
once upon a time, they were considered as the sidelined and unimportant part of any food. The
people of todays time has changed their taste completely and now what they want is generous
and local food rather than exotic and haute food. This is the reason why these small but important
inclusions i.e. ingredients and flavors have become the driving forces of the food industry.
Whether its the processed food, the home-cooked meal or and beverages, these ingredients have
taken the most important place and used as a decisive factor to set the taste, texture, color, overall
facade and presentation. Not only this, these flavors and ingredients gives birth to new and tastier
food items, plus, they also further enhances the taste of existing products. With the slow but
continuous change in the taste preferences of the consumer, the concept of global flavor has also
become very famous. Global flavor means a product would have same taste anywhere in the
world. For this purpose, special ingredients and flavors are prepared so that they give the exact
taste and odor to the food regardless of the place they are in.
The main workforce in todays specialist ingredient and flavor market is the accelerated trend
towards snacking and eating convenience combined with the globalization of the food processing
industry. This globalization became a reality by the global expansion of food manufacturing
companies and food processing companies. Not only this, their mission to provide the regular
supply of world-class quality food products has also helped this industry in getting the global
appearance. The sudden increase in demand and liking of ready-to-eat food and for preserved
