猪肉的保鲜实验，结果表明：复合膜作为包装袋的包装方法能有效地抑制鲜猪肉贮藏过程中挥发性盐基氮含量的升高及微生物菌落总数的增加，但在控制失水率与感官品质方面效果不理想；复合膜作为托盘覆膜的包装方法在控制失水率方面效果明显，在抑制挥发性盐基氮和微生物菌落总数方面有一定的作用，但效果不突出。4.将普鲁兰多糖/结冷胶复合膜用作方便面调料包的包装，实验结果表明：复合膜作为方便面调料包的包装具有一定的可行性，但包装效果还是无法与传统的方便面调料包包装相比。关键词：壳聚糖；结冷胶；普鲁兰多糖；可食膜；改性；应用PreparationandApplicationoftheEdibleFilmsBasedonPolysaccharidesAbstractNowadays,moreattentionispaidtomigrationofharmfulsubstancesforfood,whitepollutionandtheshortageofoilresourcescausedbyplasticpackagingmaterials,whichhasresultedinworldwideconcernonediblefoodpackagingmaterials.Naturalpolysaccharidesareidealforediblepackagingbecauseoftheirabundantresource,renewable,environmentalpollution-free.Butasinglefilmhaspoormechanicalpropertiesandwaterresistance.Thisresearchconcernsonthepreparationofchitosanandgellangumediblecompositefilm.Investigatingthepossibleinfluenceofeachingredientonthefunctionsoftheediblefilm,thenadoptingthemethodofioniccrosslinkingmodifiedcompositefilm,Effectofcross-linkingtimeandpHonthemechanicalpropertiesandwaterresistanceofcompositefilmwereinvestigated.Besides,infraredspectrum(FT-IR),X-raydiffraction(X-RD),scanningelectronmicroscopy(SEM)anddifferentialscanningcalorimetry(DSC)wereusedtocharacterizeandanalyzethetructureandthermalstabilityofthefilm.Alsoresearchonthepreparationofpullulanandgellangumcompositefilm,throughsinglefactorexperimentinvestigatethepossibleinfluenceofeachingredientonthefunctionsoftheediblefilm,optimizedtheingredientsthroughtheresponsesurfaceusedtheperformanceparameterwatervaporpermeabilityandwatersolubilityastheindicator.Inaddition,theapplicationsoftwokindsofcompositefilmstopackageandpreservefreshporkandinstantnoodlesseasoningwereevaluated.Theresultsareasfollows:Preparationandcharacterizationofchitosan/gellancompositefilm.Thecompositefilmhadthebestpropertiesunderchitosanconcentration1.5%,gellanconcentration2.0%,glycerolcontent0.4%.Compositefilmcross-linkedby4%sodiumcitrateand2%calciumchloride.Theresultsshowedthatsodiumcitrateandcalciumchloridecross-linkedcompositefilm,andthecross-linki
