Key words：Yam ;flour vacuum; freeze drying; solubility 1 前言 淮山是薯蓣属(Dioscorea)薯蓣(D. oppositaThunb.)的地下块茎，又称山药、山芋、山菇，既可以食用也可以药用。药用淮山分布较北，并且以山西和河南交界处为中心，而南方诸省则以食用淮山为主。国家卫生部已将淮山列入了第一批药食兼用资源目录。淮山具有较高的食用和药用价值，近年来越来越多人们进行关注和研究。而早在古代就有淮山功效的记载，在《神农本草经》中谓之“主健中补虚，除寒热邪气，补中益气力，长肌肉，在《本草纲目》中将其功用
