Futhurmore, the quantitative spectral analysis model of moisture distribution was established by combined simultaneous interval least squares (Si-PLS). Results revealed that, the moisture transfer of dough mainly occurred in 15-25 min, mainly for significantly increased of bound water and significantly decreased of loosely bound water. Si-PLS modeling showed that the main spectral regions of water distribution change were 454.5-609.0, 1 035.9-1 247.8, 1 628.6-1 804.8, 2 450.2-2 593.0, 2 701.9-2 789.1 and 3 042.9-3 121.8 cm-1.
