Due to the advantages such as high throughput, real time analysis in situ, no solvent waste, it is widely applied in the rapid screening of food safety. This review presented the applications of ambient mass spectrometry(especially direct analysis in real time) for rapid screening in food safety,including the analysis of mycotoxins, illegal additives, toxic and harmful substances, quality control, food components, and the chemical reactions in food.
