PAGE 黑龙江东方学院 学 士 学 位 毕 业 论 文（设 计） 日产100吨果粒酸奶工厂设计 黑龙江东方学院本科生毕业论文（设计） PAGE V 日产100吨果粒酸奶工厂设计 摘 要 本文是通过AutoCAD根据食品工厂设计的生产100t的酸奶要求设计，日处理能力至少达89t的鲜奶。收奶计量采用电子磅秤与流量计相结合，有三个50t的室外奶仓，采用预杀菌和分离机净乳操作。发酵型酸奶是用发酵好的生产酸奶和各种食品添加剂调配而成的，其脂肪和蛋白含量分别不低于2.3%，鲜奶或复原乳指标为F≥3.10,P≥2.80,TS≥12.0。本文根据食品工厂设计的要求，利用AutoCAD绘制了酸酸乳工艺流程图和工厂平面布置图。 本文设计的工厂采用2班倒的工作制，每天工作时间16h，除去设备清洗和升温时间4h，实际生产时间按12h计，本设计讲述了一个日产量100t酸奶厂主车间平面图及项目工艺方案的设计原则、方法、程序、设备、耗水、耗气、清洗等等。 关键词： 酸奶 ； 车间 ； 工厂设计 100 tons of fruit production plant design yogurt Abstract This article is based on the food plant design AutoCAD production of acid milk 100T requirements, processing power on at least 89 tons of fresh milk.
