PAGE 37 广 州 大 学 大学生创新训练项目总结报告 项目编号: 201211078007 项目级别: √国家级 □省级 □校级 项目名称: 淀粉基表面活性剂的制备及性质研究 项目负责人: 吴斌 负责人年级及专业:2010年级/食品科学与工程 指导老师: 刘鹏 项目所在学院: 化学化工学院 研究起止时间: 2012年6月 至 2013年11月 教务处 制 二○一三年九月 淀粉基表面活性剂的制备及性质研究 摘要 本课题以淀粉基表面活性剂为研究对象,首先利用转糖苷法合成烷基糖苷,探讨工艺条件(原料、温度、配比)对烷基糖苷表面张力的影响规律。研究结果表明烷基糖苷制备的最佳工艺参数为反应温度105℃、采用G50高链淀粉、淀粉与乙二醇的摩尔比例为1:6、淀粉与十二醇的摩尔比为1:1,此时产品转化率高、表面张力低至22.1 mN/m。其次利用酶法以热稳定性好的高链淀粉和十二烯基琥珀酸酐合成新型的淀粉糖酯,研究结果表明:淀粉酶对G50淀粉的酶解能力要显著高于G80淀粉,且酶解产物的酶解度均在前十分钟快速升高,半个小时基本保持不变。以此酶解产物为原料合成的十二烯琥珀酸淀粉糖酯,其取代度和反应效率均随原料酶解度的增大而增大,产品的溶解度和相对乳化力的变化趋势也如此,表明酶解产物的酶解度越高,淀粉糖酯产品的乳化性能越好。 关键字 高链淀粉;烷基糖苷;表面张力;淀粉糖脂 ABSTRACT In the present study alkyl polyglucoside as the research object, by changing the traditional alkyl polyglucoside raw materials, this paper discusses the process conditions (reaction temperature, reaction time, the ratio of raw materials) of alkyl indican surface tension and the influence law of the reducing sugar content in phloem. The results of the study show that: the reaction temperature 110 ℃, Starch and ethylene glycol Moore ratio is 1:6, starch and polyethylene glycol (peg) Moore ratio is1:1, Product conversion rate at this time, low surface tension 22.1 mN / m,second, the use of high thermal stability to enzymatic starch and dodecenyl succinic anhydride synthesis of novel starch sugar esters. The results of the study show that: Amylase on starch hydrolysis G50 ability to be significantly higher than the G80 starch, and the degree of enzymatic hydrolysates were the first ten minutes fast rise, half an hour remained basically unchanged. For the synthesis of this hydrolyzate of dodecene succinic starch sugar esters, degree of substitution with the raw materials and the reaction efficiency are the increase of the degree of hydrolysis, the solubility product of emulsifying power and the relative trend is also true, indicates that the higher enzymatic hydrolysates,
