PAGE .专业资料. 河南科技学院 2013届本科毕业论文 论文题目:酒店西餐厅人才危机现状及应对措施 学生姓名: 所在院系: 所学专业: 导师姓名: 完成时间: 摘 要 21世纪最贵的什么?是人才。随着知识经济时代的发展,以及中国和全球产业结构的转型和调整,酒店业竞争的日趋激烈,加上酒店业人才流失严重,酒店人才培养和供应跟不上人才需求的发展。人才作为酒店业核心竞争力的价值也日益体现,酒店人才,特别是西餐厅一线员工和中高层的管理人才日益成为市场中的稀缺资源,也成为企业争夺的对象。目前酒店普遍存在人员流失率高,管理人才紧缺、员工素质偏低等人才危机问题,不仅造成酒店经济上的损失,影响酒店的服务质量和信誉品牌,还严重制约着酒店企业的生存和发展。本文通过对酒店西餐厅人才危机的现状分析,从社会、企业、学校教育和个人四个方面分析了导致此现象产生的原因,并提出了完善西餐厅人事和薪酬管理、改善工作环境和加强员工培训等一系列解决问题的办法,期望对酒店业员工管理的发展有启发和借鉴意义。 关键词:酒店西餐厅、人才危机、原因、对策 Western restaurant talent crisis situation and countermeasures in the hotel School of Food GaoTianli Abstract What is the most expensive in the 21st century? With the development of the knowledge economy, and the transformation and adjustment of industrial structure in China and the world, the hotel industry competition is becoming increasingly fierce . At the same time, the serious loss of talents, and the supply and training of talents cannot follow the talent demand of hotel .talent as the core competitiveness of the hotel industry is also increasingly reflect the value. the hotel personnel, especially the western restaurant front-line employees and senior management talent has become the market of scarce resources, but also become the object of enterprise competition. At present the hotel common staff turnover rate is high, management personnel shortage, low quality of the staff and other personnel crisis.
