切配部岗位职责及流程 岗位职责： 负责原料的切配加工半成品及成品工作。 负责部分菜品的提前腌制改刀工作。 负责本岗位原料保管及验货工作。 按菜单和标准的要求来组织切配菜肴。 负责本岗位区域的卫生清理工作。 工作流程： 完成当日申购物品的加工及保管工作（如百叶，腰花，手切牛羊，上脑，脑花等）如未完成每项扣： 协助出菜部餐前完成部分菜品的上架和加工备货及保管工作（如虾滑，午餐肉，鸭肠，鲜毛肚，鸭胗花，鲜鸭血，方竹笋等）如未完成每项扣： 及时完成水保养品的改刀及保养工作（如特色毛肚，黄喉，特色鱿鱼，牛肚梁，千层肚等）如未及时完成每项扣： 所有加工半成品及成品的货品必须按标准完成如未按标准完成每项扣： 有本岗位菜品(如：牛蛙，腰花，手切牛羊等）因及时完成并清晰告知出菜部人员台号，如未清晰告知或未及时完成因有本部人员平均承担。 随时保持清理本岗位卫生（如：台面，地面，墩子，刀具等）如为保持清理扣： 餐后检查所剩物品的数量是否充足，如不充足因及时填好申购单(特殊情况除外）。因未填写菜品申购单或漏填每项扣： 下班前做好工作岗位卫生与切配部公共卫生如未完成下班扣： 下班前因与值班人员或晚班人员交接本岗位工作，如未交接扣： 七 年 级 英 语 教 案 施教时间：2016年2月24日 七年级1/2班 教师：张宁宁 总第1课时 课题：Unit1 Can you play the guitar?
