将剩余食材用于食品加工利用的技术研究 Research on Utilization of Surplus Food Materials in Food Processing Abstract: With the rapid development of the food industry, food waste and surplus are increasing day by day, which not only causes waste of resources but also pollutes the environment. In order to solve this problem, food processing technology has attracted much attention from researchers. This paper analyzes the current status of food waste and surplus, and proposes several effective methods for utilizing the remaining food materials. These methods include the use of surplus fruits and vegetables for pickling and drying, the production of beverages and jams, and the use of food waste for biogas production. It is suggested that the development and promotion of these technologies can not only reduce food waste, but also promote sustainable development of the food industry. Keywords: food waste, surplus materials, food processing, utilization, sustainable development 摘要: 随着食品工业的快速发展,食品浪费和剩余物增加日趋严重,不仅造成资源浪费,也污染环境。为了解决这个问题,食品加工技术受到了研究者的广泛关注。本文分析了当前食品浪费和剩余物的状况,并提出了几种有效的方法来利用剩余食材。这些方法包括利用剩余的水果和蔬菜进行腌制和干燥,生产饮料和果酱以及利用食品废弃物生产沼气。建议大力发展和推广这些技术不仅可以减少食品浪费,还可以促进食品工业的可持续发展。 关键词:食品浪费,剩余物,食品加工,利用,可持续发展 Introduction: Food waste and surplus are becoming a serious problem in the world, not only causing waste of resources but also seriously polluting the environment. According to statistics, the amount of food waste in the world has reached 1.3 billion tons, accounting for about one-third of the total food production, while the amount of edible food that is thrown away in households in the United Kingdom alone is about eight million tonnes per year. In order to alleviate this situation, it is necessary to develop technologies to convert surplus food materials into valuable products. In this paper, we analyze the current status of food waste and propose several effective methods for utilizing the remaining food materials.
