ForSalmonellatestingtheabilitytoprovidequick,sensitiveandaccuratetestresultsisimportanttoensurethatthisdiverseandcommonlyencounteredgroupofpathogensisnotdistributedintothehumanfoodchain.

Forqualitycontrolofrawmaterialsthekeyproblemisoftenthedetectionoflownumbersofviablepathogensinthepresenceofmuchgreaternumbersofbackgroundflora.Thisisasignificantproblemifthefinalproductisnotrequiredtoreceivefurthercooking.Incaseswherefoodproductsarepartiallycooked,thenchilledpriortosale,theproblembecomesoneofdetectionrequiringatestmethodwithhighsensitivitytothetargetorganism.

Conventionaltestsrequireaperiodofnonselectiveenrichmentfollowedbyafurtherperiodofenrichmentinaselectivegrowthmedium,whereconditionsfavourgrowthofthetargetorganism,whichcansubsequentlybeculturedbyplatingontoaselectiveagarplate.
