咖啡品质比较分析研究初报 1 1* 2 1 1 黄家雄 ，吕玉兰 ，罗映山 ，罗心平 ，程金焕 （1.云南省农业科学院热带亚热带经济作物研究所，云南保山 6780001 ；2.临沧凌丰咖啡产业发 展有限公司，云南临沧 677000 ） 摘要：对临沧咖啡豆营养成分与保山、德宏、普洱咖啡豆进行比较分析研究，结果表明临沧咖啡豆蛋白质、粗脂 肪和粗纤维含量低于保山、普洱和德宏咖啡豆；总糖、咖啡因含量均高于保山、德宏和普洱咖啡豆；水浸出物高 于保山和德宏咖啡豆，而低于普洱咖啡豆。通过杯品，临沧咖啡质量介于保山与普洱之间，果酸味比普洱咖啡豆 淡，而比保山咖啡豆浓，具有一致性、干净度和甜度好等特点，这与临沧气候介于普洱湿热区与保山干热区之间 有关，也与临沧土壤 pH 值介于两者之间有关，并兼两者优点。 关键词：临沧；咖啡；品质；比较 Preliminary Study on Coffee Qualities 1 1 2 1 HUANG Jiaxiong , LV Yulan , LUO Yingshan , LUO Xinping , CHENG Jinhuan1 (1.Tropical and Subtropical Cash Crop Institute of Yunnan Academy of Agricultural Science, Baoshan, 678000, China; 2.Lincang Lingfeng coffee industry development co., LTD, Lincang, 677000, China) Abstract: The coffee bean nutrition ingredients of Lincang is analyzed compared with Baoshan, Dehong and Pu’er. The results show that the protein, crude fat and crude fiber in coffee beans of Lincang are lower than Baoshan, Dehong and Pu’er; the water extraction of Lincang coffee beans is higher than Baoshan and Dehong, while lower than Pu’er; the qualities of Lincang coffee are between Baoshan and Pu’er according to the cupping test; the fruit acid of Lincang is lighter than Pu’er but stronger than Baoshan; the Lincang coffee has good uniformity, clean cup and sweetness. It refers to the climate and soil PH value. The climate of Lincang is between the wet and hot of Pu’er and dry and hot of Baoshan while the soil PH of Lincang is between the two cities and
