摘要 摘 要 蔬菜作为副食品，在人类饮食生活中具有十分重要的地位。宋代（960—1279） 商品经济发达，使得饮食也出现了不同于以往的特征。 本文在前人研究基础上，通过对两宋时期各种文献的梳理，对宋代三百年间 蔬菜的种类、蔬菜的生产领域（包括种植者、种植土地和技术）、运营领域（包 括贩卖的城市、农村市场和价格运输）及宋代蔬菜食用的文献描述进行了分析。 笔者认为，宋代结束了魏晋隋唐以来蔬菜种类大量增多的局面，蔬菜种类相 对稳定，种类分布南北差异明显；种植者和种植土地种类相比以往有所增加，种 植技术日渐丰富，这是由于自由买卖土地制度的刺激，小农的农产品供给行为向 积极对市场提供农产品转化，这一社会经济新特点，为社会提供了大量的商品性 农产品（包括蔬菜）；本文对蔬菜贩卖的城市农村“社会经济空间”进行了分析， 认为城市贩卖蔬菜地点主要分布在沿河邸店和城市繁华地段，农村分布则较为分 散，大体在江河沿岸较多，并对蔬菜价格与商税、蔬菜入城方式及各地蔬菜名产 进行了总结。最后本文主要从文献角度分析了宋代蔬菜食用方面的相关情况。通 过上述分析，力图得到这一时期蔬菜生产、运营和食用的基本概况，进而分析与 这一时期社会经济发展相联系的特点。 关键词：宋代；蔬菜；社会经济 I Abstract Abstract As non-staple food, vegetables play important roles in the human diet life. Song Dynasty (960-1279) of the commodity economy developed, making the diet appeared characteristics and development which were different in the past.
