甘薯添加對雙叉乳桿菌於脫脂乳中增殖活性之影響 黃珮琪 洪連欉* 東海大學畜產與生物科技學 (收件日期:98年6月29日;接受日期:98年8月20日) 摘  要 本試驗主要探討甘薯添加於脫脂乳中對於雙叉乳桿菌增殖活性之影響。四株試驗雙叉乳桿菌Bifidobacterium bifidum BCRC 14146 (B1)、Bifidobacterium longum BCRC 14602 (B2)、Bifidobacterium bifidum BCRC 14670 (B3)與Bifidobacterium catenulatum BCRC14667 (B4)分別接種於含0% 與5% 甘薯泥之脫脂乳,並於0、6、12、18與24小時紀錄pH值、滴定酸度及增殖菌數之變化。結果顯示,接種於5%甘薯泥脫脂乳之B3與B4其pH值於培養第6小時顯著較對照組低 (P<0.05),而其滴定酸度則與對照組無顯著差異(P>0.05);而接種於5%甘薯泥脫脂乳的B2與B3於培養第6小時其增殖菌數可達9.1 Log cfu/g以上,顯著高於對照組(P<0.05)。由上述結果可知5%甘薯泥添加於脫脂乳中,可改善雙叉乳桿菌B. longum BCRC 14602與B. bifidum BCRC 14670兩株混合培養時之增殖活性並提高其增殖菌數。 關鍵詞:雙叉乳桿菌、增殖活性、甘薯 Effect of Sweet Potato Addition on Growth Activity of Bifidobacteria in Skim Milk Pei-Chi Huang and Lien-Tsung Hung * Department of Animal Science and Biotechnology, Tunghai University. (Date Received: June 29, 2009; Date Accepted: August 20, 2009) Abstract The experiment aimed to discuss effects of sweet potato addition on growth activity of bifidobacteria in skim milk. Four bifidobacteria (Bifidobacterium bifidum BCRC 14146 (B1), Bifidobacterium longum BCRC 14602 (B2), Bifidobacterium bifidum BCRC 14670 (B3), and Bifidobacterium catenulatum BCRC14667 (B4)) were inoculated in skim milk containing 0% and 5% sweet potato paste respectively. pH value, titratable acidity, and bacterial counts were measured at 0, 6, 12, 18, and 24 hours. The result showed the pH value of B3 and B4 were inoculated in 5% sweet potato milk were decrease significantly faster (P<0.05) than control at 6 hours, and titratable acidity was no different with control. Bacterial counts of B2 and B3 were both 9.1 Log cfu/g up were significantly higher than control at 6 hours (P<0.05). In conclusion, 5% sweet potato added in skim milk can improve growth activity and increase bacterial counts of B. longum BCRC 14602 mixture with B. bifidum BCRC 14670 during incubation.
