The results show, the enzyme activity of winged bean seed Hunan POD, CAT, SOD and germination rate increased with the soaking time had changed, too long soaking time or too short will reduce the germination rate of seeds. During germination of POD, CAT, SOD three kinds of antioxidant content also made changes. This study shows that the degree of activity of winged bean seed vitality of Hunan and POD, CAT, SOD three kinds of antioxidant enzymes activity.
