Sensing technology as a rapid development in todays world one of the technologies, has become a national science and technology an important indicator of the level of development. Sensor towards the sensitive, delicate, strong adaptability, intelligence, and network direction. Optical fiber sensing technology is the late 20th century, 70 the rise of a technology, now with the optical fiber communication go hand in hand. Optical fiber sensor due to its superior performance and has become widely accepted, its small size, light weight, resistance to electromagnetic interference, anti-corrosion, high sensitivity, wide measurement bandwidth, testing electronic devices and sensors can be spaced very far, etc., and can constitute a sensor network. Advanced fiber-optic sensor sensitivity than conventional sensors orders of magnitude, to measure pressure, temperature, stress (strain), magnetic field, refractive index, strain, micro-vibration, micro-displacement, pressure, etc., the available optical fiber sensor has been achieved physical quantities measured over 70 kinds. Sensing technology is mainly traditional thermocouple or strain gauge used to monitor the signal into a voltage signal to the receiver via cable transmission, the transmission by the receiving device demodulator for processing the electrical signals back, get the required sensor information such as: temperature, strain, pressure and so on. The advantages of this technology is relatively mature; and fast sampling electrical signals, can achieve tens of KHz to hundreds of KHz sampling rate, the point needs to be monitored
