OSI亚太区产品评估政策
OBJECTIVE
To provide a minimum set of standards for the training of product evaluation panellists and performing product evaluations at all OSI manufacturing facilities within the region.
SCOPE:
This guideline covers panelist training and assessment, daily and random product evaluation, target sample and capable requirement.
GENERAL REQUIREMENTS
Panelist training:
Each manufacturing facility should have a minimum of two lead trained panelists 1 QA; 1 Production .?
The lead trained panelists should be trained by the lead customer product sensory team i.e. Hong Kong QA Lab or other .?
Training should be for all customers’ core menu and/or high volume products.
Every year at least one of these lead panelists should go through recalibration training with the lead customer product sensory team i.e. within two years each should have gone to Hong Kong QA lab or other to recalibrate .
The manufacturing facility lead panelists and QA manager are responsible for performing annual product evaluation training to all relevant production, QA, and other staff.
Training records for all trained panelists and manufacturing facility staff should be kept on file and available for review.
Training should follow customer product evaluation protocol.
Daily Product Evaluation:
Online QC must perform product evaluation for every batch of product produced.
For high volume lines samples can be taken every two hours and evaluated.
A group sensory consisting of a minimum of QA and production should be performed once each production shift.
Sensory should follow customer sensory protocol and evaluation forms.?
Records are to be entered and kept on file for all products evaluated.
Any batch of product scoring grade C/F and below 68% cannot be released for dispatch and must be placed on hold.
