酿志生态中国 ——“生态酿酒”重要问题考据 隆兵、扬均、江小华 摘 要：考证“生态酿酒”的前世今身，它发祥于四川盆地中部，在“道”、“绿”、“射洪春酒”的交融中产生；二十余年来，酿酒业从单纯追求花园式、园林式工厂过渡到以酿酒微生物为核心构建生态环境，逐渐延伸到资源的节约和污染的治理，随后与循环经济、低碳与清洁生产相融合，并通过生态化经营得以升华，最终嬗变为消费者享用的生态酒；自上世纪90年代末沱牌创建了最早的中国生态酿酒工业园后，生态酿酒工业园如雨后春笋般出现；生态酿酒学的构建彰显了先行者们的远见卓识，也集聚了酿酒科技人员的集体智慧，是行业共享的重要成果；2001年，《走向生态化经营——沱牌集团的创新及其思考》首次全面论述了生态文明，助推酿酒业成为较早践行生态文明的产业。 关键词：生态酿酒；生态经营；生态文化；生态文明；考据 The research on ecological brewing : A dedication to Chinese ecological civilization Abstract: Research on ‘Brewing Ecologically’, which originated from Tuopai Shede Wine in Shehong County of the central Sichuan Basin, born in the blend of “Dao”, “Green” and “Wine”.
