金银花清咽果冻的研制学位论文  PAGE \* MERGEFORMAT 59 金银花清咽果冻的研制 摘 要 咽喉是个易受细菌感染的器官,并常因感冒、劳累和上呼吸道感染而引发炎症,所以开发具有清咽功效的保健食品具有重要意义。金银花是卫生部规定的药食同源的植物,自古被誉为清热解毒的良药,故本实验选取了金银花为主要原料,并提取其抗菌有效成分绿原酸作为清咽功效成分,制取金银花清咽果冻。 本论文采用乙醇回流提取法提取金银花中的绿原酸,通过正交试验确定了当料液比为1:20,乙醇浓度为70%,提取温度为60℃,提取时间为60min时绿原酸的得率最高,为5.43mg/g;并且确定了金银花清咽果冻的最佳配方为:复配胶添加量为1%(卡拉胶和魔芋胶的比例为4:1),白砂糖添加量为14%、柠檬酸添加量为0.14%,绿原酸添加量为0.03%,乳酸钙添加量为0.06%,山梨酸钾添加量为0.05%。最后本论文通过抑菌试验和人群试验,评定了果冻具有清咽保健功能。清咽果冻,既方便食用,又有清咽功能,可以有效的预防咽喉疾病,具有很好的市场前景。 关键词:金银花;绿原酸;清咽;正交实验;果冻 The study of honeysuckle pharynx jelly Abstract T Throat is a special organ, which is infected by bacterium easily. And it is often easy to inflame because of catch cold, tired and upper respiratory tract infection. So it is important to develop a functional food that has the function of clearing pHarynx.
