Sodium Diacetate Safe choice for food resources The need to effectively preserve foods from spoilage continues to be a hot topic, not only from the perspective of the food technologist, but also for consumers. Historically, using vinegar has been a simple, safe and practical way to preserve foods. Acetic acid and its salts continue to be widely used as an acidulant and an antimicrobial. These natural additives are particularly effective against many yeast and bacteria species which are responsible for contaminating foods. Sodium diacetate is a free-flowing and readily available source of both acetic acid and sodium acetate. It is the molecular combination of neutral sodium acetate which holds the acetic acid inside the crystal lattice. The acid is firmly held, as evidenced by the negligible vinegar odour of the product. Sodium diacetate is supplied in a convenient granular form that readily dissolves in water, thereby releasing the two constituents. . C4H7O4Na xH2O Applications Sodium diacetate is an effective antimicrobial agent for inhibiting the growth of many types of yeast, mould and bacteria because it releases acetic acid and sodium acetate upon dissolution.
