Food in old Beijing Quanjude Roast Duck Restaurant 全聚德烤鸭店 the famous restaurant in Beijing It was founded by Yang Quanren杨全仁 in 1866 Peking Roast Duck 北京烤鸭 the full-duck banquet 全鸭宴 Donglaishun 东来顺 Its founder was Ding Deshan丁德山 It is a Muslim restaurant renowned for its hotpot mutton. Hotpot mutton 涮羊肉 Shaguoju 砂锅居 It is a restaurant first set up in1741. It is famous for three specialties: Deep-fried dishes of Pig liver or deer tail 炸卷肝、炸鹿尾 Stewed pig’s head 木炭烧猪头 Slices of meat 白煮肉 Barbecue Ji 烤肉季 It was founded by Ji Decai季德才 in 1848. It is famous for barbecue mutton. 烤羊肉 Diners pick up the mutton, which has been marinating腌泡 in a mixture of different types of spices; and put it on the iron grill, eating as they cook it themselves. The Fangshan Restaurant 仿膳饭庄 It was first opened in 1925 by Zhao Renzhai赵仁斋. The dishes here are prepared according to recipes used by the Qing court, with particular attention paid to the color, aroma, taste, and form.
