It is different from cold noodles with sesame sauce or noodle with soup. ;When customers order it, cooks will cook the cold noodles which were boiled already with hot water, and then put some seasoning. The noodles are bright yellow and flexible,moreover, it is with good looking and attractive. ;;To eat hot dry noodles, we need three special : special noodles ,special spices ,special skills. First, special noodles. They should be boiled in advance, then stir and mix them with the chilli sauce and airing them. When eat, hit them in the boiling water and drain them. This step makes it chewy. Then sprinkle the spices. Second ,special spices. A typical bowl of hot dry noodles will have sesame paste, which is the most important part, soy sauce, chopped garlic chives, pickled vegetables, sesame oil. This step makes it appetizing. Then , special skills. A well-done hot dry noodles will dry and get hard quickly. So if you can not mix the noodles and ingredients together well in few minutes and eat it, you will miss it. That’s why many foreigners say:” oh, hot dry noodles, no.” while many Chinese say:” oh ,yes, hot dry noodles.” So ,if you are skillful, try it and enjoy it. Then you can’t resist the temptation of eating it again and again. ;Dongpo Pork in Huangzhou is one of the famous dishes in Hubei.
