Smallwood, Jr.* INTRODUCTION In North Carolina plans are underway t o develop a vegetable pro- cessing i n d u s t r y t o complement e x i s t i n g f r e s h market o u t l e t s . North Carolina grows about one t h i r d of t h e n a t i o n s t o t a l sweet potato crop and ranks second behind Louisiana i n processing. This year t h r e e North Carolina p l a n t s are a c t i v e l y engaged i n processing sweet potatoes. L a s t year t h e r e were four--one being forced t o discontinue canning operations because of associated water p o l l u t i o n problems. I f t h e vegetable processing i n d u s t r y is t o grow i n North Carolina, o r perhaps even t o continue t o e x i s t , new and/or improved methods and technology f o r coping with its l o c a l environmental impact must be developed. Tabor City Foods, Inc., of Tabor City, North Carolina, processes approximately 45 percent of t h e S t a t e s pack. Located i n an economically depressed community of 3,000, t h e p l a n t provides em- ployment f o r about 500 people and cash-crop o u t l e t f o r an unknown number of farmers. The p l a n t a l s o c o n t r i b u t e s t h e majority of wastes entering t h e c i t y s outdated sewage treatment f a c i l i t y . The c i t y is p r e s e n t l y i n t h e process of building a new.sewage treatment f a c i l i t y , which, by n e c e s s i t y , had t o be overdesigned t o accommodate t h e canning p l a n t
