Abstract: cured meat products are typical representatives of Chinese traditional meat products. Their main characteristics are easy processing, unique flavor and good storage quality. This paper summarizes and analyzes the meat product characteristics and processing technology on the results of the study on the improvement of processing method by optimizing the traditional formula, to maintain its flavor characteristics, stability and improve product quality, improve product quality and to the possibility of traditional wrapping rabbit products as an example, the pickled wax products processing technology measures and critical control point (CCPS).

1. Preface
Chinas meat processing has a long history of development, forming a variety of flavors, rich and colorful products.
