食品研究与开发 ２０16 年 4 月 检测分析 Ｆood Research And Development 第 37 卷第 7 期 171 DOI ：10.3969/j .issn.1005-6521.2016.07.042 保健食品中三价铬与六价铬的分离与测定 闫美 ，谢晨星 ，朱智惠 ，陈均洪 （汤臣倍健股份有限公司 ，广东 珠海 519040 ） 摘 要 ： 建立保健食品中三价铬和六价铬分 离和测定的方法。通过对前处理阶段 的研 究发现 ，硝酸 ，高温 ，高压均可使 样品中的六价铬转化成三价铬 ，影响样品中六价铬的测定。10 %HCl 热水浸提可以有效的完成铬的释放 ，且可以防止六 价铬转化为三价铬 。通过上述的前处理 ，将 消解液过强阴离子交换树脂后 ，测得三价铬的回收率高达 96.2 % ，六价铬 的 回收率低至 0.6 % ，且保健食品铬酵母片中的铬均为三价铬 。 关键词 ： 三价铬 ；六价铬 ；阴离子交换树脂 ；铬 酵母片；原子吸收光谱仪 The Research on the Conditions of Hexavalent Chromium Convert to Trivalent Chromium in Healthy Food YAN Mei ， XIE Chen-xing ， ZHU Zhi-hui ， CHEN Jun-hong （By-health Co. ， Ltd. ， Zhuhai 519040 ， Guangdong ， China ） Ａｂｓｔｒａｃｔ ： A method was developed for the separation and measurement of trivalent chromium and hexavalent chromium in health food. Though the study of pretreatment process ， It was found that nitric acid ， high tempera－ ture and high pressure could make the hexavalent chromium to trivalent chromium ， which impacted the mea－ surement of the sample. It was found that the sample which was preprocessed with 10 % HCl and hot water could be effectively released chromium ， and could prevent the conversion of hexavalent chromium to trivalent chromium. The separation of trivalent chromium and hexavalent chromium was achieved well on strong anion ex－ change resin ， the recovery rate of trivalent chromium achieved 96.2 % and the recovery rate of trivalent chromi－ um achieved as low as 0.6 % .
