2013-07-01 国内外食用色素标准的比较及检测方法的研究进展 宋丹萍 1 张宏 1.2* 李琪 2.3 （1.四川师范大学化学与材料科学学院，四川 成都市 610068 ；2. 四川师范大学生命科学院，四川 成都市 610068；3. 四川师范大学植物资源开发与应用研究所，四川 成都 610068 ） 摘要：随着食品工业的发展，国内外在食品工业中大量使用食用色素作为添加剂用于改善食品的色泽。为 了更好的理解食用色素的标准及分析检测状况，本文对中国、美国、日本、欧盟和 CAC 等主要国家食用色 素的差异进行对比，分析检测方法进行总结。结果表明中国允许使用的食用色素品种比美国、欧盟和 CAC 的多，多数色素允许使用的限量比欧盟限量更大。且国内外对食用色素的检测方法主要是：高效液相色谱 法、薄层色谱法、极谱法、毛细管电泳法、光度法等。目前对食品中色素的分析检测方法较多，但对食用 色素在体内的代谢分析鲜见报道。通过对食用色素的标准，分析检测方法及体内代谢几方面来阐述食用色 素在食品安全和身体健康等问题中的影响。 关键词：食用色素；使用标准；差异对比；分析检测 Research Progress of Edible Pigments’ Standard Comparison and Detection Methods in Domestic and Foreign SONG Dan-ping1 ZHANG Hong12* LI Qi23 （College of Chemistry and Materials Science, Sichuan Normal University, Chengdu 610068,China ） Abstract: The edible pigments were used as an additive by food industry to improve the food color. In order to better understand the standards and the situation of analysis. This essay described the edible pigments’ differences among the China, the United States, Japan, the European Union and the CAC, in addition, the article summarized the analytical method. The results showed that the varieties of edible pigments in China were more than the United State’s, the European’s and the CAC’s, most of the pigments’ permitted limits were larger than the European’s. In addition, the main methods for the detection of edible pigments all over the word were: high performance liquid chromatography, thin layer chromatography method, polarographic method, capillary electrophoresis, spectrophotometry, etc. At present there are many methods to analysis the pigments in food, but the edible pigments in human body metabolism analysis was seldsom to be reported.
