Near-infrared spectroscopy will have broad prospects in the agricultural products security field because of the outstanding advantages of non-destructive testing characteristic. This paper summarized the basic principles and the characteristics of NIR, introduced the pretreatment technology of NIR such as the pre-concentration technologies
