功能性食品结课论文--益生菌和益生元在功能食品的应用.docVIP

摘 要： 本文阐述了肠道为机体提供能量的功能及其重要性，肠道内的微生态系统与人体免疫和人体健康的重要关系。根据肠道中菌群的类别，着重介绍了肠道内益生菌的分类、功能及增加肠道益生菌的两种途径，这两种途径分别是进食含活性益生菌的食品和摄取益生元类的非活菌食品。根据这两种不同的增加肠道内益生菌的途径，调节肠道健康的功能性食品可分为两类，一类为添加益生菌的功能性食品，另一类是添加益生元的功能性食品。根据全球不同国家和地区的现状，本文对益生菌和益生元在各国功能食品中的应用情况进行分析、介绍和举例说明，发现虽然各国和地区在益生菌或益生元的使用量及使用领域存在较大差异，但益生菌和益生元的市场都呈现良好的增长趋势，最后本文展望了益生菌和益生元的在功能性食品中应用的发展趋势。 关键词：益生菌：益生元：肠道：功能性食品 Probiotics and prebiotics in advance in functional food Abstract: This paper expounds the intestinal provide energy for organism function and importance, intestinal microecosystem and immunity of the human body and human health an important relationship. According to the intestinal flora in category, introduced emphatically the intestinal probiotics classification, function and increase the intestinal probiotics in two ways, these two kinds of ways are eating food containing active probiotic foods and intake of probiotic metaclass non live food. According to the two different increase intestinal probiotics pathways, regulation of intestinal health functional food can be divided into two categories, one category for the added probiotic functional foods, another kind is to add prebiotics functional food. According to the different countries and regions of the current situation, the paper of probiotics and prebiotics in the functional food in the application were introduced and analysis, for example, found that although the countries and regions in probiotics or prebiotics usage and application fields of different probiotics and prebiotics, but the market presents good growth trend finally, this paper forecasts the probiotics and prebiotics to applications in functional foods development trend. Key words: Probiotics; prebiotics; intestinal; functional food 1前言 人类对食品最基本的要求是吃的饱，其次才会要求吃的好。而当这两个要求都得以满足后，人们就希望所摄入的食品对自身健康有维护和促进作用，于是出现了功能性食品。功能性食品的出现不仅是一种时尚，更重要的是体现了人们消费水平与价值观念的提升。面对生活环境周围空气和水资源等污染日益加剧，各种恶性疾病发病率也逐年上升，人们在生活水平普遍提高的今天，更加关注自己的健康[1]。因而在国际、国内同时掀起了一股功能性食品的研究与开发热潮，英国敏特信息咨询公司对2003～2008年全球新型功能食品的功能宣称进行了统计分析，如图1所示
