影响陈皮色素稳定性因子研究   【摘要】目的:为生产各种食用品、化妆品、医药药品等色素新产品提供重要原料,研究陈皮色素的提取条件和稳定性。方法:以水为提取剂,用紫外分析法研究陈皮色素的稳定性。结果:以水为提取剂,料液比为1:80,在室温下浸提24h。结论:色素在330nm处有最大吸收峰,该色素水溶性较好,强碱性物质对该色素稳定性有一定影响,但热稳定性良好。苯甲酸钠、柠檬酸、醋酸、蔗糖、葡萄糖、可溶性淀粉等食品添加剂对陈皮色素稳定性无明显影响。氧化剂、还原剂中除抗坏血酸对色素的影响明显外,其他均无明显影响,金属离子对其影响较小。   【关键词】陈皮;色素;提取;稳定性   【中图分类号】R284.2【文献标识码】A【文章编号】1007-8517(2009)10-0001-02      Study on the stability of pigment from pericarpium citireticulatae   ?QiIUDanping TANG Yanqing LUO Yongin ,HUANG Suoyi??2*?   (1.Undergraduate of Grade 2006,Department of Clinical Laboratory Medicine,Youjiang Medical College for   Nationalities,Baise Guangxi 533000 ;2.Teaching and Research Section of Chemistry,Department of Pharmacy,Youjiang   Medical College for Nationalities,Baise Guangxi 533000)?   【Abstract】 Objective :To provide important raw material for all kinds of new pigment used in food products,cosmetic and leechdom etc. Study on the Extraction and Stability of pigment from Pericarpium citri reticulatae.Methods Water was used as the extractant in the extraction,and the pigment stability was investigated by UV spectrum.The optimum condition for water extraction is: water was used as the extractant and it was extracted under room temperature for 24h.Results:The optimum condition was that water was used as the extract and 1g material was extracted in 80ml extractant under room temperature for 24h.Conclusion :The λmax for the pigment was 330nm,which has good solubility in water, the strong alkaline substance have an effect on the stability of Pigment,and excellent thermal stability in the extractant for wide temperate range.Some common food additive,such as sodium benzoate, sucrose, glucose,oxidizing agent,reducing agent,metallic ions have little effect on the stability of the pigment.   【Keywords】Pericarpium citri reticulatae; pigment;extraction;stability      随着人们回归自然的意识日益增强以及对合成色素应用和研究的结果,促使人类重新确认天然色素作为食品添加剂有着不可替代的重要价值。由于食用天然色素直接取自于自然界中的动植物和微生物,因而用于食品、化妆品乃至药品更为安全可靠。近年来,研究结果表明象番茄红素、花青素等色素均具有生理活性,其药用价值正
