StudyontheCharacteristicsofMeatQualityandDifferencesinPRKAG3andLPLandPPARGenesExpressioninMuttonofZhaowudaandWulateAbstractThisresearchsystematicallystudyonthemuttonofZhaowudaandWulateandMongoliaslaughteringperformanceandmeatquality.Thegeneralmeatquality,chemicalcompositionandthecontentsofaminoacidandfattyacidAtthesametime,StudyontherelatedgeneexpressionofmeatqualityinthemuttonofZhaowudaandWulatebyrealtimePCR,thenanalysisthecorrelationbetweenthesegenesandmeatquality.Theresultsshows:Thepre-slaughteringweight,carcassweight,anddressedcarcasspercentagefromZhaowudasheepwereextensivelysignificanthigherthantheWulatesheep;buttherateofpuremeatisnotsignificant.MongoliasheepwashighlysignificantlowerthantheZhaowudaandWulate.ThepH1ofzhaowudalambwashigherthanwulate’sandthepHvaluehadtheupwardtendency.Theshearforceofzhaowudawashighlysignificantlowerthanthewulate.Thecookinglossofwulateadultsheephigherwasthanthezhaowuda’s.Theresultdescriptionthatwulateadultsheephasfavorableproductionrateandprocessingcharacteristic.Thecontentofwaterofzhaowudaadultsheepwaslowest,butthecontentofcrudefatwashighest.Thecontentsofcrudeproteinfromdifferentlambmusclesweresignificantlydifferent.Itisshowedthatnutritivevaluefromwulatelambwasbetterthanzhaowuda’s.Thecontentsofashfromdifferentmuttonweresignificantlydifferent.Thecontentsofasparticacid,glutamicacidandalaninefromwulatemuttonwerehigherthanthezhaowudamutton.Thecontentsofmethionineandessentialaminoacidofwulateadultsheepwerehigherthanthezhaowuda’s.Itisshowedthatwulatemuttonwasdelicious.Thecontentsofpalmitinicacidofzhaowudaadultsheepwerehigherthanthewulateadultsheep.Thecontentsofstearicacidofzhaowudalambwerehigherthanthewulatelamb,butthecontentsofstearicacidofzhaowudaadultsheepwerelowerthanwulateadultsheep.Thecontentsofcaproicacidfromdifferentmuttonweresignificantlydifferent.ZhaowudasheeplongissimusdorsimusclePRKAG3differentialgeneexpressionwas61.3%inwulatesheep.ThePRKAG3mRNAexpressionwasnegativelycorrelatedtotheIMFcontentofthezhaowudasheep(γ=-0.42);ThePRK
