柑橘皮中黄色素的提取工艺研究 摘 要 柑橘皮黄色素的主要成分是柠檬烯与类胡萝卜素的混合物,还富含维生素E 和稀有元素硒它是一类利用现代的生物技术提取的重要的天然色素这些物质对于防止癌细胞的生长, 延迟细胞衰老和增强人体免疫力均有很好的作用所以它不仅可作为饮料、蛋白食品、淀粉食品、调味品的着色剂,也用于食品的强化营养剂、香味剂和保健食品的重要配料之一,是一种理想的天然色素。所以,多方面开发、研究和应用天然色素对保证人类的健康和发展绿色食品工业十分重要。本实验以柑橘皮中黄色素的吸光度为指标,通过分析原料粒度、提取溶剂、提取液浓度、料液比、温度、时间、pH各因素对提取率的影响,采用单因素及正交实验优化了提取工艺。 结果表明:乙醇对提取效果最好,醇浸提法单因素实验中,最佳条件为:乙醇浓度99.7%,提取温度60℃,时间5h料液比1:4、pH5.0通过醇提法正交优化实验,得到最佳工艺条件为:99.7%的乙醇、60℃、料液比1∶8、时间5h、pH5.0。关键词:柑橘皮;黄色素;提取 Study on Extraction Technology of yellow pigment Orange peel ABSTRACT Limonene and carotenoid mixture is the main component of orange pigmentis, which is also rich in vitamin E and rare element selenium .Orange pigmentis is a kind of the use of modern biological extraction technology and become an important natural pigment. These substances to prevent the growth of cancer cells, delay cellular senescence and enhance the body immunity have very good effect, So it can not only as a drink,protein food,starch food,seasoning colorants ,but also used for the strengthening of the food nutrition agent,fragrance agent and one of the important ingredients of health food,it is a kind of ideal natural pigment.So many aspects of the development, research and application of natural pigments to ensure human health and development of green food industry is very important. The experiment on Extraction of yellow pigment from orange peel rate as the target, through the analysis of various factors, such as particle size of raw materials, extraction solvent, extraction solution concentration, ratio of material to solvent, temperature, time, PH factors on extraction rate influence, using single factor and orthogonal experiment to optimize the extraction technology of yellow pigment from orange peel. The results show that, ethanol as the solvent for extraction of yellow pigment from orange peel effect best.
