山东省青岛市畜禽屠宰管理现状 刘　倩，牟　婵，万思敬 （青岛市动物卫生监督所，山东青岛　266071 ） 摘　要 ：为了解山东省青岛市畜禽屠宰管理发展现状，优化管理政策措施，开展了畜禽屠宰管理现状调查。调 20 查发现：青岛市肉食消费以猪肉为主，牛、羊、禽、兔肉为副；全市现有生猪定点屠宰企业 家，年屠宰量约 220 4 2 6 2 万头；家禽屠宰企业 家，年屠宰量 亿只 ；牛羊屠宰企业 家，年屠宰量 万头。通过对青岛市畜禽屠 宰企业监管体系和追溯体系建设，以及无害化处理等内容进行调研分析，指出当前存在代宰模式隐患多、监管 责任难厘清、规范管理待完善等问题，并由此提出严格代宰管理，探索 “两检合一”措施，改善产品追溯体系， 完善行业管理规定，引导健康消费及加大资金投入等发展建议。 关键词：畜禽屠宰；监管 ；代宰 ；无害化处理 S851.3 C 1005-944X 2018 01-0046-04 中图分类号： 　　文献标识码 ：　　文章编号 ： （ ） DOI 10.3969/j.issn.1005-944X.2018.01.014 ： Investigation on Administration of Livestock and Poultry Slaughtering in Qingdao City of Shandong Province Liu Qian ，Mu Chan ，Wan Sijing Qingdao Animal Health Supervision Institution Qingdao Shandong 266071 China （ ， ， 　 ， ） Abstract In order to recognize the current situation of administration for livestock and poultry slaughtering in Qingdao ： City，so as to provide support for optimizing the administration policies and measures.
