摘要
杀青是通过高温破坏和钝化鲜茶叶中的氧化酶活性,抑制鲜叶中的茶多酚等的酶促氧化,蒸发鲜叶部分水分,使茶叶变软,便于揉捻成形,同时散发青臭味,促进良好香气的形成的一种制茶步骤。
本文主要是设计家用,或者小作坊使用型的滚筒式杀青机,机械的特点是杀青效果好,机器的尺寸大小合适,价格低廉,且功能齐全,可以确保杀青过程中不会有受热不均匀,或者茶叶炒焦,以及杀青不充分等影响茶叶品质的现象发生。
本文设计的滚筒式杀青机,采用电热丝加热,不会产生污染,且杀青机设计有热循环系统,可以有效避免热能的浪费,同时设计中也解决了隔热的问题,以及传动方式的问题,确保机器安全,可靠的运行,杀青机设计过程中所有参数都经过准确计算,可以确保产品的实际可用性。
本设计论述了,茶叶杀青机的工作原理,以及设计理念,文中详细给出了杀青机的重要参数的计算方式,以及杀青机机械结构的设计方法。

Abstract
Water-removing is through high temperature damage and passivation of fresh tea enzyme activity, inhibition of tea polyphenols in fresh leaves of the enzymatic oxidation, evaporation of fresh leaves of some water, leaves become soft, easy rolling forming, with green smell, promote the formation of good aroma of a tea manufacturing steps.
This paper is the design of household, drum type machine or small workshops use type, mechanical characteristic is fixing effect is good, the size of the appropriate machine, low price, and complete functions, can ensure that no fixing process of uneven heating, or tea fried coke, and fixing not fully of tea quality phenomenon.
Water-removing is the first step of tea tea fixation is good or bad, determines the quality of tea, principle of roller type tea-steaming machine is the use of the electric heating wire rolling, make tea in order to achieve the purpose of uniform heating.
Drum type machine designed in this paper, using electric heating, no pollution, and machine design thermal cycling system, can effectively avoid the waste of energy, at the same time design also solve the heat problem, and the problem of the transmission, ensure machine safety, reliable operation, all parameters of machine design process through accurate calculation, can ensure that the actual product availability.
