12ls1302-08 44 粮食与油脂 2013 年第 26 卷第 2 期 天 然 黑 玉 米 色 素 研 究 与 应 用 进 展 王金亭 （聊城大学东昌学院，　山东聊城　252000 ） 摘　要：黑玉米色素是从 黑色玉米植株、玉米芯和玉米籽粒 中提取花青苷，是一种安全、无毒天然 食 用色素；黑玉米色素呈有 良好抗氧化活性 ，并具抗肿瘤、延缓衰老、降血压、调节血脂、降血糖等 功能。黑玉米色素以酸性溶剂提取 ，其至少含有 9 种花色苷，主要活性物质为花青素 –3– 葡萄糖苷； 黑玉米色素作为天然食品添加剂，可用于食品、药品、化妆品、染色剂等。该文综述黑玉米色素化学 结构、理化性质、提取工艺及应用价值 ，对加强该色素深入研究和开发利用具有一定参考价值。 关键词：黑玉米；色素；花色苷 Research advances on natural purple corm pigment WANG Jin-ting （Dongchang College ，Liaocheng University ，Liaocheng 252000 ，Shandong ，China ） Abstract ：Purple corn pigment is anthocyanins ，a kind of natural pigment from the purple corm plant ，purple corm cob and purple seed ，which is a kind of safety ，not poisonous edible. It clearly had antioxidant activity ，anti–tumor ，anti–aging ，reducing blood pressure ，regulating blood lipids and blood glucose level and so on. The purple corm pigment was extracted in acid solvent ，containing 9 anthocyanins at least and the main active components of red pigment was anthocyanins–3–glucoside. Purple corn pigment is a type of existing natural food additives ，and can be used to color for food ， medicine ，cosmetics ，dyes and other industries.Based on the latest research results of home and abroad in recent 10 years ，the extraction process ，the chemical constitution ，the physic–chemical property ，the biological active functions ，and application of purple corm pigment were summarized. This information may lead to a reference value in depth study ，the comprehensive development and application of the purple corm pigment. Key words ：purple corn ；pigment ；anthocyanins
