In other casks, minimal flor will grow, thus exposing the wine to air inside the cask. These casks will be classified as oloroso, and fortified to 18° Brix. The fortification kills the remaining yeast and leaving unfermented sugars. Oloroso Sherries spend longer in the solera, acquiring a deep color and richly concentrated, sweetly raisined flavors.
