食品研究与开发 2014 年11 月 基础研究 Food Research And Development 第35 卷第21 期 1 DOI ：10.3969/j.issn.1005-6521.2014.21.001 60 种蓝莓花青素的含量及抗氧化性的 比较研究 1，2 1，* 2 2 2 2 田密霞 ， ， ， ， ， 李亚东 胡文忠 赵蕾 张幸敏 纳瑞 （1. 吉林农业大学园艺学院，吉林长春130118；2. 大连民族学院生命科学学院， 生物化学工程国家民委-教育部重点实验室，辽宁大连116600） 摘 要：以 60 个蓝莓品种为实验材料，对它们的花青素含量进行了测定，并且测定了代表抗氧化活性的 DPPH 自由基 清除能力和其总的抗氧化能力。研究表明：花青素的平均含量为 5.378 mg/g。在这 60 种蓝莓中，L 品种花青素含量比较 高，其样品鲜质量平均含量为 7.23 mg/g ，样品鲜质量含量在 5.98 mg/g～8.69 mg/g。而 M 品种花青素含量比较低其样品鲜 质量平均含量为 2.514 mg/g ，最低的只有 1.25 mg/g；H 品种品种较多，其花青素含量大小有一定的差距，为 3.18 mg/g～ 8.02 mg/g，没有明显规律性。同时对其清除 DPPH 自由基能力，总抗氧化能力测定表明，蓝莓花青素含量越高，其抗氧化 能力就越强。 关键词：蓝莓；花青素；抗氧化活性；DPPH Comparison of Anthocyanins Content and Antioxidant Activity in 60 Kinds of Blueberry TIAN Mi-xia1，2 ，LI Ya-dong1，*，HU Wen-zhong2 ，ZHAO Lei2 ，ZHANG Xing-min2 ，NA Rui2 （1.Horticultural College，Jilin Agricultural University ，Changchun 130118，Jilin ，China；2.
