摘 要 用不同浓度的醋酸溶液混合不同质量的壳聚糖,加入不同质量 的甘油,Span40 匀浆后作为涂膜剂,均匀涂敷在 PE 保鲜膜上,干 燥后制备 PE- 壳聚糖双层膜。根据抑菌效力、成膜效果和弹性模量 的单因素实验确定了壳聚糖浓度、醋酸浓度、甘油和 Span 浓度的范 围,并通过正交实验,以双层膜的弹性模量为评价指标,确定了双 层 膜 的 最 佳 配 方 为 : 壳 聚 糖 1.5% , 醋 酸 0.6% , 甘 油 0.5% , Span401% 。 对新鲜猪肉进行包装处理,分别在室温, 4 ℃下贮藏保鲜。以 感官评定作为鲜度指标,并与未经包装的样品进行对比,以分析 PE- 壳聚糖双层保鲜膜对延长肉类货架期的可行性及其效果。实验结 果表明:PE- 壳聚糖双层保鲜膜保鲜效果明显优于未经包装和普通 PE 包装的对照组,其感官评价的各项指标均较对照组有明显差异, 能延长保质期 1-2d 。 关键词: 双层膜;壳聚糖;保鲜;鲜猪肉 1 PE-chitosan Bi-layer Film Abstract With different concentration of acetic acid solution mixed of different quality chitosan, add a different quality of glycerin, span. To sensory evaluation, the total bacterial count as a fresh degree index, in the storage period we measure the determination of the freshness index, and compared with the samples without the packaging to test PE- chitosan double plastic wrap and extend the shelf life of meat to the feasibility and its effect. And according to the different concentration of film effect, to determine the optimal concentration of chitosan film. The experimental results show that the PE-chitosan double film preservation effect obviously better than the control group without packaging, its all the indexes than the control group have obvious difference, can extend the shelf life of 3-4 d. And the best formula for each concentration: chitosan 1.5%, acetic acid 0.6%, 0.5% glycerin, span1 %. Key words: b
