Let stand for at least l/2 hour. Remove squeezed water until dry as possible. Place one of the ginger slices on bottom. Pack the vegetables into your pickling jar. Put the other ginger slices on top. Mix the sugar into the vinegar in a bowl and shake until the sugar is melted. Pour over the vegetables until covered. Pour in a bit more vinegar to top up if necessary.
