Key words: Egg lysozyme; ion exchange method 摘 要: 鸡蛋溶菌酶作为溶菌酶的一种，也具有杀菌作用，可用于食品的杀菌保鲜，是一种安全防腐剂。在这里，我们通过了解鸡蛋溶菌酶的作用机理、特性，通过实验操作离子交换法，来对其工艺制备进行模拟并提出优化方案。 关键词: 鸡蛋溶菌酶
