Great popularity in the market in South Korea ezo abalone production volume fell sharply. That’s why if want to make abalone can，we have to increase the cost. So the market are looking for new abalone substitutes to manufacture abalone in cans. North America akane abalone in California still has no market， whether from not expand or from the output are the best choice to replace in the south ezo abalone. But America in southwest akane abalone in California， muscle after heating， sharp condensed becomes very hard so that cannot edible. So this experiments is to compare the difference of protein ratioofconstituents among America’s akane abalone， South Korea’s ezo abalone and South Africa’s kepu abalone . By differential scanning calorimetry of three kinds of abalone of three proteins melting enthalpy train compared to draw Hm respectively composition of collagen than differences.
