MET ODS:C ntr l as A s- p ergillus terreus , the 7 rdinary species f M onascus including M . aurantiacus Lee, et al were tested with 9 kinds f s urces f nitr gen and 13 kinds f s urces f carb n and the abilities f hydr lysis f gelatin. RESULTS:All f the tested Monascus can utilize rganic nitr gen such as s ybean fl ur, while exist bvi usly differences in using in rganic nitr gen such as amm nium sulfate.The tested M onascus can utilize m st f carb hydrates, w hile n t utilize lact bi nic acid. There exist bvi usly differences in using g ssyp se, lact se, rhamn se and s rb ae. M . seror ubesceus Sat and M . p urp ureus Went can hydr lyze gelatin while thers n t.
