芝麻蛋白功能特性研究

摘 要
芝麻是我国主要油料作物之一,产于长江、黄河流域。麻油加工厂遍及这些地区,制油后下脚料即芝麻粕,在早期常当作废料丢弃,或作为肥料种地,实之浪费资源。研究表明:芝麻粕中蛋白质含量丰富高达50%,其氨基酸组成及比例均可与优质蛋白质媲美,可见芝麻粕是一种值得开发和研究的廉价优质蛋白源。本课题就是对芝麻蛋白提取工艺和部分功能性质进行研究。功能性质对蛋白质应用范围起着举足轻重的作用,是决定蛋白利用价值大小的关键因素。
所谓蛋白质的功能性质,是指蛋白质在食品加工和储藏过程中所起的特殊作用,对芝麻蛋白来讲,是其本身固有的性质,如组成成分、氨基酸序列、形态结构等的作用。
因此,本实验着重研究了芝麻蛋白的吸水性、吸油性、湿润性、热凝集性、持水力、发泡性、黏度等功能性质,以期为芝麻粕的高附加值综合利用和深加工开发提供理论依据和技术支持。结果表明,实验室自制的芝麻蛋白具有良好的吸水性、吸油性、湿润性和发泡能力。

Functional Properties of Protein from Sesame

Abstract
Sesame is one of the main oil crops in China, produced in the Yangtze River, Yellow River Basin. Throughout these regions, there are many sesame oil processing plant. The offal is sesame seed meal, which is often abandoned or as fertilizer farming in in the early times that wastes a lot of resources. The study shows that: the protein in sesame seed meal is as high as 50%, and the types and proportion of amino acid in sesame seed meal is comparable to high quality protein, which showing that sesame seed meal is a low-cost and high-quality protein source that worth development and research. This paper is the study of sesame protein extraction process and its some functional properties. The functional nature plays an important role in range of applications of the protein and the key factors of the size of the protein value.
The so-called protein functional properties is the special role played by the protein in the food processing and storage process, and in terms of the sesame protein, it is its inherent nature, such as its composition, amino acid sequence and morpHological structure and so on.
