鮟鱇鱼加工下脚料综合利用研究 钟秋琴 (浙江东海科学技术学院、医学院,浙江 舟山 316004) 空一行 [摘要] 目的 水产胶原具有重要的科学价值与应用价值,对胶原新来源和胶原类健康食品的开发具有重要的现实意义。方法 以安康鱼皮为原料,采用酶法提取胶原蛋白,碱法(浸灰法)提取明胶,通过正交实验对安康鱼皮胶原蛋白、明胶提取工艺进行优化,并测定了安康鱼皮的基本组成成分、鱼皮胶原蛋白的氨基酸组成及明胶粘度、色价、等电点和氨基酸组成。结果 胃蛋白酶添加量为1%,料液比为1:10,酶解时间6h,酶解温度为5℃时鱼皮胶原蛋白提取率最高,提取率为11.01%;而鱼皮明胶最佳提取工艺为:Ca(OH)2质量分数0.2%,料液比为1:10,提取温度为10℃,浸灰时间7d,明胶的提取率为11.23%。结论 提取胶原蛋白和明胶产品,使安康鱼皮资源得以合理开发利用,从而利于提高其加工的综合效益及经济附加值。 [关键词] 安康鱼皮;胶原蛋白;明胶;提取 Study on the synthetical using of the castoff from the processing of anglerfish Zhong Qiuqin (Food and Pharmacy School, Medical School, Zhejiang Ocean University, Zhoushan, Zhejiang 316004) 空一行 [Abstract] Because the marine lives of collagen has the significant value in science and application, the research about the new source of collagen and healthy grocery based on the collagen is very important. The collagen, gelatin from anglerfish skin have been parting extracted by using pepsin and alkali method. The technological parameter of the extraction were determined by orthogonal design. The composition of anglerfish skin and the amino acid composition of the collagen, the viscosity, color, IP and the amino acid composition of the gelatin were also analysed. The results showed that the optimum addition of pepsin was 1%(w/w)and the optimum ratio between fish skin and solvent was 1:10, extracting for 6 h at the temperature of 5. Under this condition, the rate of extraction of the collagen from anglerfish skin was 11.01 percent. Also under this condition of w%=0.2 (w/v), the optimum ratio between fish skin and solvent was 1:10, extracting for 7 d at the temperature of 10, the rate of extraction of the gelatin from anglerfish skin was 11.23. The paper was study on the synthetical using of the castoff from the processing of anglerfish to extracting collagen and gelatin. So the resources of anglerfish skin can be used reasonable, thus it can improve the processing of benefits and economic value. [Key words] Anglerfish skin; Collagen; Gelatin; Extracting 我国是
