A bstrac t: The Perilla is fu ll of nutrition and contains a lot of Carotenoids in leaves asw ell as KCaM gNa in
Stem s leaves and seeds; a lot of b iologically active substances was found in leaves and Perilla. s oi,l such as Terpe-
noidFlavonoids and F lavonoids G lycosides. Modern m edicine have approved that the perilla has the function ofAnti-
oxidationaging preventioncholesterol controlb lood sugar control anti- allergyanti- m icrobem em ory and v-i
s ion mi proving. perilla is also an edib le plant that w ith h igh research value. The study of perilla is becom ing hot in
m ed ical research, health care, food and the chem ical engineering at dom estic and internationa.l A lot of products con-
taining perilla have been developed, such as health ed ib le oilcondmi entbeveragep igm entpreservativessw ee-t
