市售乳制品中反式脂肪酸风险评估
市售乳制品中反式脂肪酸的风险评估 摘 要 目的 了解齐齐哈尔市居民乳制品摄入量及其影响因素,并对乳制品中反式脂肪酸种类及含量进行检测,探讨人群反式脂肪酸摄入的风险评估。方法 采用分层整群随机抽样的方法抽取齐齐哈尔市居民3100人。采用SPSS19.0软件进行统计分析,并用气相色谱法对顺式和反式脂肪酸甲酯进行定性、定量分析。结果 所检测乳制品中反式脂肪酸含量,液态乳中为0.03g/100g,发酵乳中为0.03g/100g,乳粉中为0.06g/100g;居民平均每人每天通过液态乳摄入反式脂肪酸量为0.05g,通过发酵乳摄入量为0.02g,通过乳粉摄入量为0.015g;结论 性别、文化程度、家庭人均月收入均影响人群乳制品的摄入,居民每人每天通过乳制品摄入反式脂肪酸的健康风险较低

Abstract Objective Discussion residents dairy intake and the impact of intake factors; Qiqihar common market by three dairy brands of trans fatty acids in type and content of testing, and use of the population of dairy intake, people discuss trans fatty acids intake risk assessment. Methods Stratified cluster random sampling method to extract Qiqihar 3100 investigation. Statistical analysis methods are used SPSS19.0 software, and analyzed by GC method cis and trans fatty acid methyl esters qualitative and quantitative analysis of the influence of factors of population intake of dairy products the number and content of trans fatty acids contained in the daily intake of dairy products exposure risk assessment. Results Liquid milk trans fatty acid content of 0.03g / 100g, fermented milk trans fatty acid content of 0.03g / 100g, trans fatty acid content in milk powder was 0.06g / 100g; an average daily intake of trans residents through a liquid milk the amount of fatty acids 0.05g, by fermented milk intake of trans fatty acids 0.02g, by milk intake of trans fatty acids 0.015g. Conclusion Gender, education level, family income were affected population intake of dairy products, residents fed dairy products per person per day intake of trans fatty acids in health risk is low.

反式脂肪酸是指分子中含有一个或多个反式双键的非共轭不饱和脂肪酸[1]。天然的反式脂肪酸来源主要是反刍动物脂肪组织及其乳制品[2],研究表明大量食用含 TFA的食物会加速动脉硬化,容易导致心脑血管疾病、冠心病、糖尿病和老年痴呆等疾病[3-5],已成为近年来相关领域关注的热点[6]。国家倡导居民每日饮用乳制品,但却没有文献说明由乳制品摄入的反式脂肪酸是多少,是否安全。本研究按GB5413.36-2010《婴幼儿食品和乳品中
