Now,I will introuduce famous Huaiyang cuisine to you . Brief introduction As is known to all,Huaiyang cuisine is one of four major chinese dishes. Huaiyang cuisine has 2000 years. It mainly located in Yangzhou,Suzhou,Huai‘an,Xuzhou. In the southern Song Dynasty,Huaiyang cuisine became important part of the chinesn dishes. The flavor of Huaiyang cuisine is light,fresh and sweet. It is characterized by stewing,braising and steaming. Brief History Originated in Zhou Dynasty Formed in the Song and Tang Dynasty Developed in the Ming and Qing Dynasties Features ? focus on selecting raw materials(注重原材料的选择) ? pay attention to the knife (注重刀工) ? keep the original flavor (保持原有风味) ? strong but not greasy(浓而不腻) ? taste fresh and mild (口感温和适中) Represent Wen Lou soup (文楼汤包) Longjing Shrimp (龙井虾仁) Soft pocket little eels (软兜长鱼) Kai Yang Pu Vegetables(开洋蒲菜) Squirrel mandarin fish(松鼠厥鱼) Zhenjiang noodle 镇江锅盖面 Zhenjiang noodle is Zhenjiang city in Jiangsu province make known to every family of local Chinese traditional pasta.
