Food and Drug Inspection Office in Zhaotong City , Zhaotong ,Yunnan 657000) Abstract [ Objective ] In order to provide scientific basis for production and processing of apples in Zhaoto吨， as well as finding convenient and exact method of measuring the total polyphenol in apples , the total 川poolyphenol ∞cont忧en川t wa缸s measured by Folir卧r Using 70%串 a创CI川d ethyl alcohol as the solvent , total polyphenols of apples was extracted by supersonic method at 35 C, then added Folin-Cio- calteu reagent and 120 g1L Na2 C03 solution , and measured the absorbancy at 765 nm. [ResultJ Basing on gallic acid , the mass concentration had an obvious linear relation with absorbency within the scope of 0 - 125. 4 mglL (r =O. 999 1). As a consequence , the total polyphenols content in samples is 36 1. 1 - 1 ∞8.0 mgl峙， and adding standard recoveηresult is 103.2% , RSD 1. 4%.
